I have been trying to locate them as the owners had been shifting locations for some time and I have no time to locate them. It's really good now that I have found them so we can finally find back the taste we missed.
The stall is now helmed by mum and son where the son is now the main chef for cooking the fried oysters omelette. His father, in the past stirs up a very good plate of fried oysters omelette and they have erratic opening hours when they are located at Simon Road.
Let's see if the standard maintains after shifting here. By the way be prepared to wait during peak hours.
Ingredients include simple tapioca and rice flour and eggs, fried with fresh oysters and garnished with spring onions. Comes with homemade chilli sauce.
Now to the taste.
Still the good old crispy and flavourful oyster omelette we had. Crispy outside and soft inside which takes a lot of skill to perfect. It felt that more eggs are used in quantity now as compared in the past so the sticky gluey feel is lesser now. Oysters are still decently big and fresh and spring onions are cooked down nicely and not overly done.
The chilli, still the old traditional chilli with a little bit of sourness to bring out the flavours of the oysters. Still feels wholesome and thick.
The father's version has a little more integrated feel of the tapioca starch with eggs and crispiness but overall, still very enjoyable.
