Food Review: Keisuke Ramen Tonkotsu King

(located within Orchid Hotel, along the chains of Japanese restaurant on level 1)


Firstly it's a very small shop accommodating probably a maximum of 20 pax, thus explaining the queue that's always forming outside during meal times.

The deco reminds you of the standard Japanese ramen shop in Japan less counter seats which you will see more in Japan.

Similarly to other outlets, the same appetiters apply here with the hard boiled eggs and spiced sesame bean sprouts. I have description in my other Keisuke outlets, be sure to check out other posts.

Black Spicy Tonkotsu Ramen
Price: $10.90 (add $1 for seaweed)

As flagship outlet for Keisuke, you can expect only the best tonkotsu ramen and obviously it's really one of the better tonkotsu broth that you can get in town.

In this bowl of black spicy tonkotsu ramen, the taste of the ramen is a combination of tonkotsu broth (you will see the floating bits of pork fats) and a spicy garlicky flavour mixed together. The result is a mix of good thick pork broth and a little bit of gelatine left over on the mouth.

In the bowl of ramen, you will also have fungus, a big piece of chashu as well as spring onions to top it off. In this case i have top up with a piece of seaweed to soak up the broth.

Generally the broth is a little towards the salty side even though I have asked for the normal version so if you are not used to more salty taste, you can ask for less salty broth. I have eaten the normal tonkotsu, for that it's alright to ask for the normal saltiness version.

The chashu, although it's big and tender, lacks flavour other than the porky taste. Usually a good piece of chashu will have some flavour of mirin and soy in it, bringing out the flavour of pork further with unami-ness.

Ultimately, it's a good bowl of tonkotsu ramen with that strong tonkotsu flavour as well as the sticky residue remaining on your lips. Well it's Keisuke flagship outlet and it definitely lives up to its name.
